Craving something sweet but not in the mood to bake? The Peppermint Crisp Tart, also known as mud pie, is a South African favourite — rich, creamy, and ridiculously easy to make. It’s perfect for a braai, Sunday lunch, or just a midweek pick-me-up after classes.

Best of all, it’s budget-friendly and uses only a few simple ingredients you can find at any supermarket.

    Ingredients

    • 250 ml whipped cream
    • 1 tin (360g) of caramel treat
    • 1 packet of Tennis biscuits
    • 1 Peppermint Crisp bar or any mint chocolate

    Method

    1. Start by grating or chopping the Peppermint Crisp chocolate into small pieces. Set it aside for later.
    2. In a clean bowl, whisk the cream until soft peaks form, be careful not to overwhisk.
    3. In a separate bowl, stir the caramel treat with a fork until smooth.
    4. Gently fold half of the caramel and some of the chopped chocolate into the whipped cream.
    5. Line the bottom of a square or rectangular dish with a layer of Tennis biscuits.
    6. Spread the cream and caramel mixture over the biscuits, making sure to cover the edges evenly.
    7. Repeat the layers until all your ingredients are used up.
    8. Finish off by sprinkling the remaining chopped chocolate on top.
    9. Place the tart in the fridge to set, ideally overnight, but at least for three to four hours if you’re short on time.

Serve chilled with a dollop of whipped cream or a scoop of vanilla ice cream for the ultimate treat.
